Why the shape matters
A bed of uniform extruded pellets packs more consistently than irregular granules, which gives a more even flow path and less tendency to channel, meaning water is less likely to find a low resistance route and pass through with little contact. The uniform shape also gives a lower and more predictable pressure drop at a given flow, and the pellets resist attrition better, producing fewer fines that migrate downstream. That combination suits high flow duties and applications where consistency matters more than absolute density.
Where they are actually used
Pellet carbon is more common in gas phase work, vapor and odor control, than in domestic water treatment, where granular carbon dominates whole house beds and carbon block dominates cartridges. In water, pellets appear in specialist applications, in some industrial adsorbers, and in aquarium and pond filtration where the bed is small and channelling would be costly. If a domestic system specifies pellets, it is usually because the designer wanted predictable pressure drop across a small bed rather than maximum capacity.
Comparing the three forms honestly
Granular carbon gives the highest flow for the lowest pressure drop and is the sensible choice for a whole house tank, at the cost of some channelling risk in a poorly designed vessel. Carbon block is the densest, gives the best contact and adds mechanical filtration to the adsorption, and is standard in cartridges and reverse osmosis pre filtration, at a higher pressure drop. Pellets sit between them on flow and consistency. None is better in the abstract: the duty decides.
What no form of carbon does
Worth stating plainly, because carbon is bought to fix things it cannot touch. It does not soften water, since dissolved calcium and magnesium are unaffected. It does not remove nitrate, arsenic, fluoride or total dissolved solids, which need a membrane or a specific media. It does not disinfect, and in fact removes the disinfectant, so anything downstream loses its residual protection. Carbon handles chlorine, taste, odor and a defined list of organic compounds, and it does those very well.
