Why two probes rather than one

A single reading of the treated water tells you very little, because feed water quality changes: a utility switching source or a well shifting seasonally moves the number without anything being wrong with the system. What matters is the difference between feed and product, which is the membrane's rejection. A dual probe monitor reads both and lets you see that difference directly, which is why the useful models have an in and an out probe rather than a single sensor.

Where the probes go

The feed probe on the incoming line before any treatment, and the product probe on the membrane output before the storage tank. That second placement matters: sampling after the tank includes whatever the tank and the polishing filter have contributed and blurs the reading you actually want. Fit them with tees at points that will not be disturbed by servicing, and route the cables where a cartridge change will not snag them.

What it catches

A gradual narrowing of the gap between the two readings, which is a membrane approaching the end of its life, and it happens slowly enough that nobody notices from taste. A sudden convergence, which suggests a failure such as an o-ring bypass letting feed water past the membrane. And a rise in the feed reading, which is information about the supply rather than the system. All three are visible on a display and invisible to a household that tests twice a year.

The limits, which are the same as any meter

It measures conductivity and converts it, so it reports how much is dissolved and never what, and many contaminants that matter are dangerous far below the concentrations that move it.
