How the winding makes a filter

That is depth filtration, and it means the cartridge holds a large volume of dirt through its thickness rather than blinding on its surface. Pressure drop climbs gradually rather than suddenly, which gives useful warning, and the structure tolerates pressure fluctuation better than pleated media does.
What it suits
Well water carrying real sediment, where the dirt holding capacity means fewer changes. Systems with pressure swings, such as a well pump cycling, where a pleated element can be damaged by repeated flexing. Applications needing a wide range of ratings, since string wound cartridges are made in coarse grades that melt blown elements are less commonly offered in. And industrial and agricultural duty, where robustness matters more than the last increment of consistency.
The weakness worth knowing
The structure is less uniform than a melt blown cartridge, so its rating is nominal in character: it captures most particles at the rated size and lets some through, which matters where a specific claim is being relied on. Some grades can also shed fibres if run far past capacity or subjected to a sudden pressure surge, which shows up as fine material downstream. For a polishing stage where consistency matters, a melt blown or pleated element is the better choice.
Materials and using them well
Yarn is commonly polypropylene, which suits general cold water use, with cotton and other materials available for particular chemistries and temperatures. Check the core material too, since it has to hold the winding under pressure.
