What deionization removes and what it ignores

It does not touch anything without a charge, which includes a wide range of organic compounds, and it has no effect on microorganisms whatsoever. A DI cartridge with no carbon and no disinfection stage in front of it produces water that is very low in dissolved solids and says nothing at all about biological safety.
The exhaustion problem
Resin holds a finite number of exchange sites and then stops working. Unlike a clogged sediment filter, an exhausted DI cartridge gives no visible warning, and in some conditions it can release ions it previously captured, so the output quality can go backwards. Industrial users monitor this with continuous conductivity meters for exactly that reason. A household with no meter has no way to know where the cartridge stands, which is a poor basis for a drinking supply.
Where DI water belongs
Laboratory work, car detailing rinses that must dry spot free, aquarium mixing, humidifiers, steam equipment and battery topping up. All of these want low dissolved solids and none of them care about microbiology. That is the natural home for a DI cartridge, and it is why they are sold through hardware and hobby channels rather than as household drinking-water systems.

If you want low dissolved solids at the kitchen tap, a reverse osmosis system is the household version of the same idea, with sediment and carbon prefilters ahead of the membrane and a certified claim list you can check. If your concern is a specific contaminant, choose a filter certified for it. Either way, find the target first: every community water system publishes an annual Consumer Confidence Report and the EPA maintains a finder for it, so you can see what was detected in your own supply.
